Whipped Tallow Cream

• Grass-fed beef tallowThe body of the cream, from grass-fed and grass-finished cattle, rendered slowly and filtered clean. Its fatty acids — largely oleic, palmitic and stearic — are close to the ones human skin produces itself, which is why it melts at body temperature and sinks in instead of sitting on top.
• Vanilla beanWhole beans steeped into the tallow for weeks, so the scent is the bean's own vanillin rather than a fragrance oil. It is why this smells like baking rather than like a candle — and why it fades honestly instead of lingering all day.
• Espresso beanSteeped alongside the vanilla. Roasted coffee carries hundreds of aroma compounds, and infusing the beans whole pulls the warm, toasted end of that range into the tallow.
• Castor oilRoughly ninety per cent ricinoleic acid, an unusual fatty acid carrying an extra hydroxyl group. That is what makes castor oil so much thicker than other plant oils, and it is what gives the whip its cushion and stops the texture collapsing into a grease.
• Jojoba oilNot really an oil. Jojoba is a liquid wax ester — the same class of molecule that makes up about a quarter of human sebum — which is why it feels dry rather than heavy and absorbs without residue. Wax esters are also far slower to go rancid than true oils, so it keeps the jar stable.
• BeeswaxThe set, and the seal. A little firms the whip so it holds its shape in the jar, and as an occlusive it leaves a breathable film that slows how quickly water evaporates from the skin's surface — which is what keeps skin feeling soft for longer after you put it on.
• Frankincense oilSteam-distilled from the hardened resin of the Boswellia tree, used in perfumery for thousands of years. It is the reason the base smells warm and faintly resinous rather than of nothing at all, and it is in every scent we make.

If your jar firms up in a cold house or softens in a warm one, that's just tallow being tallow — nothing's wrong with it.
